Thx Carb! It is 1 of the 5 major Pacific NW salmon species; aka King Salmon. The Spring Chinook is highly valued for its taste and fat content 🐟

I learned it as Spring Salmon, and over 30lbs was a Tyee. Used to smoke a lot of em for a local Charter Company... very yummy.

Funny, I'm not a big fan of salmon, though the rest of the family is. I'm a white fish kinda gal, or scallops, shrimp, crab or lobster. But I hate the smell of fish in my house, so those are typically summer foods (bbq!)

Lots of acceptable names for this tasty salmon Adiposemann but my fave is Oncorhynchus tshawystcha. Kind of just rolls of the tongue, doesn‘t it?😉
