LOL! Keyten, thanks for the kind words, 💗, but I actually am a French Acadian (Cajun), descended from the French who were driven out of Acadia in Canada in 1755 and who settled in South Louisiana; the most famous of whom was Chef Paul Prudhomme of K-Paul's in New Orleans, a distant cousin of mine. And, having just celebrated my 76th birthday, I am definitely old. But I'm still kicking, and I still like to cook and eat good food (and drool over the pictures you post). 😍😋😍😋 Keilin, thank you!

Thank you, Chris and Fishingwidow. The ribs are absolutely delicious. Since I've started cooking them in the Instant Pot, I wouldn't cook them any other way.

Keyten, you're describing New Orleans French cooking, which is supurb, but is Creole, not Cajun. Cajun is simple, country food; think gumbo, etouffée, fricassee, jambalaya, sauce piquante, rice and gravy, crawfish, catfish... 😊

I simmer my ribs stovetop in root beer for 45 min, then sauce and broil. How long would it take in instant pot?

Chris, there is no difference, Instant Pot is just a brand name. I do mine on high pressure, never tried it on low. I wonder what the difference is? Jsmeemee, cook time is 22 minutes, then another 15 minutes or so for the pressure to release. Then 6 minutes under the broiler. So a total cook time of less than 45 minutes. The pot takes a few minutes to come to pressure, but not more than your pot does to come to a boil. Total time from pot to table, under an hour. I put the ribs on a rack over liquid, and I know some people use root beer for the liquid and like it very much.

OMG,Bella, I love walking on the beach at sunrise! (Though I don't walk very well these days). Watching the pelicans playing follow the leader, flying low over the flat, calm water. Heaven!

shirfleur I live in the area of Canada where the Acadians were. It’s Avery sad history of what happened. Didn’t know a thing about it until I moved here 16 years ago. Born and raised in Canada but it’s not taught in all schools. Too much shame maybe? I’m so sorry. Hopefully some things have changed, but not near enough.

Wifey, there are many connections today between the Acadians in Canada and those in Louisiana. Every country has shameful periods in its history; all we can do is try to be the best we can be today. I'm not going to talk politics on this site, as it is not the place, but I do want to tell you that we love our Canadian neighbors. No apologies necessary! 💚💛💜💚💛💜

Unfortunately, I never got there in my travels, and I don't travel anymore, as I don't walk very well now. The only part of Canada I've ever visited is Vancouver Island. I have friends who go regularly; they tell me how beautiful it is. My older son lives in Alaska, so when I would go north, that's where I would go.
